Zucchini fries – Less carbs than French fries and no oil

French fries are one of the most popular fast foods. They are often served as a side dish of burgers, sandwiches, gyros and many other meals with meat. You don’t need special culinary skills to make fries at home, you just need a lot of oil. Unlike French fries, zucchini fries don’t require any oil and they are lower in carbs.

How to cut zucchini fries

It takes less time to cut zucchini so it looks like fries, than to cut potatoes. Zucchinis are easier to cut, plus you don’t need to peel them like potatoes.

First, wash zucchini thoroughly and dry them with some clean kitchen cloth or paper towel. Then, cut the top and the bottom of zucchini. Cut zucchini vertically so its pieces have the shape of fries. If they are too thick, cut them in halves vertically. They should be around half inches thick.

What other ingredients do you need for these fries?

The trick about these fries is that you don’t fry them in deep oil, but bake them in the oven with baking paper.

Apart from salt and pepper, you will need beaten eggs and breadcrumbs mixed with grated parmesan. You can either add spices to the egg mixture or the breadcrumbs mixture. Don’t add salt directly to zucchini fries, because they will become mushy. If you like spicy food you can also add some chilly flakes.

Soak cut zucchini in beaten eggs and then roll them in grated parmesan with breadcrumbs. Place them on a baking sheet and bake at 200 degrees for about 20 minutes or until they get golden color.

How to serve zucchini fries

Zucchini fries go well with tomato sauce, yogurt sauce, tzatziki. They are a perfect side dish for any meat meal but they may go well with falafel too. You can also eat them as the main meal, if you are not too hungry.

While French fries go well with ketchup, these fries are perfect with tomato sauce. The quickest way to make tomato sauce is to use a can of pelati and add some salt, pepper and fresh or dry basil. Instead of basil you can add parsley and also some fresh garlic. Cook the sauce for about 5 to 7 min at medium heat. If you prefer fresh ingredients you can cook fresh tomatoes with these spices and leave it to cool off.
