Instructions
Zucchini fries
Cut the top and the bottom of zucchini. Cut zucchini vertically so its pieces have the shape of fries. If they are too thick, cut them in halves vertically. They should be around half inches thick.
Beat the eggs. Mix the breadcrumbs with parmesan, salt, pepper and optionally chilli flakes.
Soak cut zucchini in beaten eggs and then roll them in grated parmesan with breadcrumbs. Place them on a baking sheet and bake at 200 degrees for about 20 minutes or until they get golden color.
Tomato sauce
Cook pelati with salt, pepper and basil for about 5 to 7 min at medium heat. If you prefer, you can add basil when the sauce is cooked.
