Everyone likes pizza, including me, but the problem with pizza is that you can easily put on weight if you eat it too often. If you want to cut carbs because you are on a low carb or keto diet,  pizza would be the first thing to get rid of. However, there is a way to eat low carb pizza and that is eggplant pizza. You couldn’t imagine my happiness when I tried this eggplant pizza recipe and realized how similar pizza flavor it has. 


I was inspired by Julia Child’s eggplant pizza when I came up with this easy and quick recipe. Using eggplant as pizza crust is a real invention. You will need less than 30 minutes to make these pizza bites and what is more- it tastes good when it is cold. It is a low calorie summer dinner or lunch, perfect for meal prep, but it can also be an appetizer or a side dish. You can play with the ingredients and make different versions of pizza slices.

When you start making pizza, the first thing you need to know is to make a pizza crust. If you wonder how to make eggplant pizza crust, the answer is simple. Eggplant is a pizza crust. You just need to wash the eggplant thoroughly and to cut it into rounds (rings). Sprinkle some sea salt and black pepper and place it in the baking pan on the baking sheet. If you want to make pizza on a grill, brush the grill with some oil before you put eggplant rings on it.

What about the pizza topping?

The first topping on your eggplant pizza crust is fresh sliced tomato. Instead of using ketchup, pelati or any other tomato sauce, put thin slices of fresh tomatoes on each eggplant ring. Sprinkle a pinch of sea salt, dried basil or oregano and a drizzle of olive oil on each tomato slice. Cover pizza with thin slices of mozzarella, gauda or any cheese of your choice. But remember, it has to be a cheese with good melting point.  Bake at 200 degrees Celsius for 25 to 30 minutes.

Can I make grilled eggplant pizza?

If you don’t want to bake eggplant pizza in the oven, you can do it on a grill. But in that case, you should grill eggplant slices on each side and then add other pizza toppings. And don’t forget to brush the grill with some oil first.

Here’s what you need to make a low carb, tasty eggplant pizza:

1 eggplant of medium size – sliced in rounds, no need to bake eggplants first if you use a regular oven

Sliced fresh tomatoes – the number of slices depends on the number of eggplant slices. You will need approximately 3 medium sized tomatoes. If the eggplant ring is too big, put two smaller slices of tomato

Dried basil or oregano – a pinch of basil or oregano on each tomato slice, you can try with fresh one as well

Sea salt– or any other type of salt; a pinch of salt for each tomato and eggplant slice

Black pepper – a pinch of pepper on every eggplant slice

Olive oil– a drizzle of olive oil on each tomato slice, or any other vegetable oil 

Mozzarella, gauda or any similar cheese – the cheese with a good melting point is a safe choice

Additional ingredients for eggplant pizza– Ham, prosciutto, bacon, sausage or any other type of cured meat

How many calories in eggplant pizza ?

This eggplant pizza recipe doesn’t have much calories because I used fresh tomatoes, just a bit of salt and olive oil and cheese. If you add ketchup or canned tomatoes it will have more calories. Also if you add ham, prosciutto or any other processed meat, the pizza will have additional calories. Three eggplant rounds have about 120 calories.

Ingredients

  • 1 medium eggplant
  • 3 medium tomatoes
  • 4 tsp dried basil or oregano (or less)
  • sea salt to taste
  • black pepper to taste
  • olive oil to taste
  • 150 gr mozarella, gauda or any similar cheese (a slice of cheese on each eggplant ring)

Instructions

  • Wash the eggplant thoroughly and to cut it into rounds (rings). Sprinkle some sea salt and black pepper and place it in the baking pan on the baking sheet.
  • Put thin slices of fresh tomatoes on each eggplant ring. Sprinkle a pinch of sea salt, dried basil or oregano and a drizzle of olive oil on each tomato slice.
  • Cover pizza with thin slices of mozzarella, gauda or any cheese of your choice.
  • Bake at 200 degrees Celsius for 25 to 30 minutes.
