- 1 medium eggplant
- 3 medium tomatoes
- 4 tsp dried basil or oregano (or less)
- sea salt to taste
- black pepper to taste
- olive oil to taste
- 150 gr mozarella, gauda or any similar cheese (a slice of cheese on each eggplant ring)
Wash the eggplant thoroughly and to cut it into rounds (rings). Sprinkle some sea salt and black pepper and place it in the baking pan on the baking sheet.
Put thin slices of fresh tomatoes on each eggplant ring. Sprinkle a pinch of sea salt, dried basil or oregano and a drizzle of olive oil on each tomato slice.
Cover pizza with thin slices of mozzarella, gauda or any cheese of your choice.
Bake at 200 degrees Celsius for 25 to 30 minutes.
