Zucchini is one of my favorite vegetables. I like deep fried zucchini with eggs and flour or low carb version- zucchini fries. You can also put zucchini slices in moussaka, make stuffed zucchini with ground beef or zucchini boat filled with chicken, tomatoes and sour cream. Apart from savory dishes, you can use zucchini to make something sweet. When I first heard about zucchini bread I thought it was a savory dish. 

Not until recently did I find out that zucchini bread was actually a sweet thing. If you like banana bread, you will like this bread too. It is usually flavored with cinnamon, vanilla extract and applesauce. Zucchini bread is also enriched with walnuts, pecans or dried fruits like raisins. 

Similar to banana bread, you can eat it with or without spreads, for breakfast or as a snack. 

What does zucchini bread taste like 

Believe it or not, zucchini bread doesn’t taste like zucchinis. Zucchini gives that moisture but not the flavor. Depending on what spices and ingredients you put in bread, it can have the flavors of cinnamon, nutmeg, apple, walnuts, raisins. If you want a chocolate flavor you can add chocolate chips as well. 

How to make zucchini bread 

Zucchini bread is very easy to make, but there are certain things to have in mind when preparing zucchini. If you don’t prepare zucchinis properly your bread can turn out soggy and mushy. 

It all comes down to these steps:

1.Grate zucchini and remove only excess liquid that appears from grating. Don’t squeeze it. The liquid in zucchinis is what makes the bread moist. 

2. Combine dry and wet ingredients separately and then mix them together. Pour the mixture in a bread pan and bake the bread for about 50 to 55 minutes. 

Should I peel zucchini ?

Zucchini shouldn’t be peeled for making, just grated. When you grate zucchini it will be thin enough so the skin won’t bother you. Plus, I always have a feeling that not peeling zucchini prevents it from being mushy. 

How to grate zucchini for zucchini bread

First, wash zucchini thoroughly. Then, use the grate to shred zucchini. Remove the excess water from it but don’t squeeze it. 

How do you know when zucchini bread is done 

Even though your bread seems golden brown outside that doesn’t mean it is baked inside. Use a toothpick to test if the bread is done. If a toothpick doesn’t have anything on it, that means the bread is done. Otherwise, bake the bread for an additional 5 or 10 minutes. 

Can you freeze zucchini bread 

Zucchini bread can last up to several days at room temperature, if you store it in an airtight container. If you like it, you will probably eat it in two days. However, if you make too much of this bread, you can always freeze it wrapped in an aluminum foil. Frozen zucchini bread can last up to three months. When you want to unfreeze it, just leave it at the room temperature to thaw naturally.

  • 2 cups grated zucchini
  • 2 eggs
  • 1 cup brown sugar (or one more half)
  • 1 cup olive oil
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • a pinch of salt
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 cup walnuts (optional)
