The Best Recipe for Zucchini Bread

Crunchy and moist at the same time, this zucchini bread will be a perfect snack or breakfast idea. Zucchinis make the bread moist, but the spices give that scrumptious flavor. No one would resist it!

  • 2 cups grated zucchini
  • 2 eggs
  • 1 cup brown sugar (or one more half)
  • 1 cup olive oil
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • a pinch of salt
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 cup walnuts (optional)


  • Grate zucchini and remove only excess liquid that appears from grating. Don't squeeze it. The liquid in zucchinis is what makes the bread moist. 
  • Combine dry and wet ingredients separately and then mix them together.
  • Pour the mixture in a bread pan and bake the bread for about 50 to 55 minutes. 
  • Leave the bread to cool for at least 20 minutes before serving.
