The Best Recipe for Zucchini Bread
Crunchy and moist at the same time, this zucchini bread will be a perfect snack or breakfast idea. Zucchinis make the bread moist, but the spices give that scrumptious flavor. No one would resist it!
Servings: 6 people
- 2 cups grated zucchini
- 2 eggs
- 1 cup brown sugar (or one more half)
- 1 cup olive oil
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- a pinch of salt
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 cup walnuts (optional)
Grate zucchini and remove only excess liquid that appears from grating. Don't squeeze it. The liquid in zucchinis is what makes the bread moist.
Combine dry and wet ingredients separately and then mix them together.
Pour the mixture in a bread pan and bake the bread for about 50 to 55 minutes.
Leave the bread to cool for at least 20 minutes before serving.
