Homemade nachos recipe with cheese - Easy Way

This is the quickest way to make nachos with cheese without making the cheese sauce. If you still want to make nachos with cheese sauce, check out my instructions above on making cheddar sauce for nachos.

Ingredients

For tortilla chips

  • 1 pack tortilla wraps
  • 4 tbsp olive oil
  • salt and pepper to taste
  • 1 tsp chilli powder or chilli flakes (optional)

For red beans paste

  • 1 can red beans
  • 2 cups yoghurt
  • salt to taste

Other ingredients

  • 220 to 250 gr cheddar cheese (grated or cut in slices)
  • 2 cups pico de gallo (optional)
  • 2 cups guacamole (optional)

Instructions

  • Cut tortilla wraps in six or eight equal pieces. Start by cutting tortillas in halves, then each half cut in halves and so on.
  • On a baking sheet, add as many tortilla triangles as there is space. Brush them with some olive oil.
  • In a small pot, combine salt, pepper and some chilli powder and sprinkle that seasoning mix on tortilla triangles.
  • Bake nachos at 200 degrees Celsius until they become golden, which is around 10 min. Repeat everything until all nachos is baked.
  • On a heat resistant plate, place tortilla chips, spread some red bean paste and add slices of cheddar cheese. You don’t need to add both on each nacho chips.
  • Add another layer of nachos and again spread some beans and cheddar slices (or grated cheddar cheese).
  • Bake up to 5 minutes at 170 degrees or until cheese is melted.
  • Add some pico de gallo and guacamole between the layers of nachos, or chopped peppers of your choice.

Notes

To make red bean paste, you just need to rinse the beans from the can, wash them and blend them together with yoghurt. One can of beans needs up to 2 cups of yoghurt, but add yoghurt gradually and stop before the paste is too liquid. You can add a bit of salt if you like.
