Healthy chicken quesadilla recipe

This cheesy chicken quesadilla recipe features crispy tortilla, juicy chicken, fresh peppers and tomatoes and a load of melted cheddar cheese.

Ingredients

  • 1 pack store bought tortilla wraps (or make homemade tortillas)
  • 200 gr cheddar cheese, grated
  • 500 gr chicken breasts or chicken thighs
  • 2 big peppers (1 yellow and 1 red)
  • 1 tsp chilli peppers, chopped (optional)
  • 2 tbsp chicken quesadilla seasoning (more information below)
  • 4 tbsp sour cream
  • 1 cup fresh tomatoes
  • 1 ½
    cup cooked corn

Instructions

  • Season the chicken and leave it to rest while you are cutting the veggies.
  • Cut the chicken and stir fry it at medium temperature.
  • While chicken is cooking, grate the cheddar cheese.
  • Remove the chicken when it’s ready and put a tortilla wrap in a pan. You can use the clean pan if you don’t want the tortilla to be oily. 
  • Put cheddar cheese on the tortilla, then the chicken and veggies. Spread some sour cream on top before you fold the tortilla. You can put cheese on both sides of tortilla, but chicken and veggies should be placed only on one side of it so you can fold it easily. 

Notes

For chicken quesadilla seasoning mix: Store bought seasoning for tacos (or for quesadilla if you find), chilli flakes, chilli powder, sweet paprika and pepper.
