Ingredients

  • 1 tsp oregano
  • 1/2 tsp cajun
  • 1 tsp sweet paprika
  • 1 tsp smoked paprika
  • 2 tsp salt
  • 1 1/2 tsp pepper
  • 3 tbsp brown sugar
  • 4 slices prosciutto
  • 1 tbsp dijon mustard
  • 3 tbsp apricot jam
  • 2 pounds pork ham

Instructions

  • To cut the ham rind, you need a sharp knife and a cutting board. Place the knife between the rind and the meat and cut as much as you can, from all sides. Finally, use your hands to peel the rind off.
  • Mix oregano, pepper, cajun pepper, smoked paprika, sweet paprika and salt.
  • Sprinkle the pork rub mixture and rub the ham thoroughly. The better you rub, the tastier pork will be. Wrap the ham in prosciutto. Place the ham in a heated oven, and bake for one hour at 375 degrees Fahrenheit.
  • After one hour of baking, sprinkle the brown sugar all over the ham and wrap it in prosciutto. Put it back in the oven for an additional one hour.
  • In the last 15 minutes of baking, brush the mixture of apricot jam and dijon mustard, or any other mustard you have.
