Flourless chocolate cake in a mug, keto and sugar free

Whether you are on a keto diet, sugar free or low carb diet, you may still eat desserts. There are numerous tricks to make sugar free or flourless desserts, and it doesn’t always require a long list of unknown ingredients. To be honest, I am not on any of these diets, especially not now when I am pregnant, but I try to eat healthier than before. As I am very addicted to pastry, chocolate, and everything sweet, at least what I can do is reduce the sugar and bad carbs intake on a daily level. Instead of eating regular cakes and chocolate desserts, I experimented a bit and got this beautiful flourless chocolate cake in a mug.

I was surprised to see that the cake looks so fluffy and it tastes almost like a regular chocolate brownie, even though I didn’t put any chocolate. I call it flourless chocolate cake because it tastes like chocolate, thanks to cocoa. However, you can use this same recipe and add any type of chocolate. See more info below.

How to make flourless cake?

So, if you wondered how to make flourless cake your question has just been answered. Ground flax seeds do a good job instead of plain flour. If you don’t like flax seeds, you can use coconut flour, almond flour or any other flour alternative. You don’t need to buy these, if you have a blender or chopper you can use it to grind almonds or flax seeds. It’s much cheaper.

Two minute flourless mug cake recipe

This recipe for flourless mug cake requires a microwave but feel free to bake it in the oven. It takes up to 2 minutes to bake this cake in a microwave. I assume you will need to bake it for at least 20 minutes or even more, if you use a regular oven.

Although it is one mug cake, I find it too heavy to eat the whole cake by myself, so this recipe can serve 2 people as well, depending on your appetite. I used the biggest mug I had, it should be wider than a regular one.

Ingredients:

  • 2 tablespoons of ground flax seeds 
  • 1 full tablespoon of cocoa
  • 1 tablespoon of coconut oil
  • A pinch of salt
  • 1 egg 
  • ½ teaspoon of baking powder 
  • Stevia or any sugar alternative
  • Homemade sugar free chocolate (this is optional,I didn’t put it this time, see the notes below)

How much of sugar substitute to use for this chocolate mug cake?

If you are on a sugar free diet, you can use stevia, erythritol or any other sugar alternative you prefer. Depending on how sweet you want this mug cake to be, you can use more or less sweetener. Start with 2 or 3 stevia serving packets and add more next time if you need. This mug cake doesn’t need to be so sweet.

As I don’t use sugar substitutes, I usually put honey instead of sugar. For this flourless chocolate cake, I used 2 tablespoons of honey

What chocolate to put in this mug cake?

I didn’t put any chocolate, because at that moment I didn’t have my homemade sugar free chocolate and I don’t see the point of using regular sugar rich chocolate in a flourless cake. If you choose to make flourless mug cake, to use stevia or other sugar alternatives, there is really no point to put chocolate. Believe it or not, this mug cake tastes almost like chocolate brownie even though I didn’t put chocolate.

If you still want to put some chocolate in it, use sugar free chocolate. You can buy it or even better, make it at home. It’s very easy. 

Homemade sugar-free chocolate easy recipe

In a saucepan add a tablespoon of coconut oil and warm it at low heat. Add a tablespoon of honey and a tablespoon of cocoa. Stir everything nicely so it becomes very smooth. Cook no longer than 5 minutes at low heat and then put it in a cookie cutter. Freeze it for at least 4 hours or until chocolate is firm enough.

Ingredients

  • 2 tbsp ground flax seeds
  • 1 tbsp cocoa
  • 1 tbsp coconut oil
  • 1 whole egg
  • a pinch of salt
  • ½
    tsp baking powder
  • 2 servings of stevia (or 2 tbp of honey)

Instructions

  • In a wide, big mug add all dry ingredients first and whisk them.
  • Add wet ingredients and stir until the texture is smooth and there are no lumps. You can use a mixer instead of a spoon.
  • Bake in a microwave for 1.5 minutes at the highest temperature. Use the toothpick to test if the cake is baked enough. If necessary, bake it for an additional half of minute.

Notes

You can use any type of sweetener, instead of stevia.
Adding chocolate to this cake is optional, even without chocolate it tastes like a brownie.
