Quesadilla with chicken, cheese and veggies – Quick and easy lunch

When you think of Mexican food the first thing that may come to your mind is a tortilla with cheese, meat, vegetables and hot sauces. Even though many Mexican dishes feature tortilla, you cannot get bored cooking Mexican food. Whatever you make, chicken quesadillas, burritos, enchiladas, nachos, you can put different ingredients and have a different dish almost every time. Instead of a burrito, you can prepare a burrito in a bowl, or instead of quesadilla with cheese you can make chicken quesadilla.

What is good about quesadillas is that you can prepare them for breakfast, lunch or breakfast. It all comes down to what you choose to put in it. Quesadilla for breakfast doesn’t require many ingredients- some cheese and cured meat and you are good to go. 

Chicken quesadilla with cheese recipe

When you make a quesadilla for lunch or dinner you may want to include more ingredients and put all the nutrients you need for a good, healthy meal. My chicken quesadilla with cheese recipe is very easy to follow and you can change it a bit every time you use it. There is a variety of ingredients you can put in your chicken quesadilla and here I have chosen for you the ingredients you always have in your fridge. 

A crispy tortilla, with juicy chicken and melted cheddar cheese, and some peppers that give a fresh flavor, this is what makes this chicken quesadilla so tasty.  

Quesadilla Preparation Steps

  1. Season the chicken and leave it to rest while you are cutting the veggies.
  2. Cut the chicken and stir fry it at medium temperature.
  3. While chicken is cooking, grate the cheddar cheese.
  4. Remove the chicken when it’s ready and put a tortilla wrap in a pan. You can use the clean pan if you don’t want the tortilla to be oily. 
  5. Put cheddar cheese on the tortilla, then the chicken and veggies. Spread some sour cream on top before you fold the tortilla. You can put cheese on both sides of tortilla, but chicken and veggies should be placed only on one side of it so you can fold it easily. 

Notes: You need to do the filling quickly so tortilla doesn’t burn. That’s why you should have all the ingredients ready before you put tortilla in a pan. The cheese will melt quicker if it’s grated or sliced into very thin pieces. If you put the cheese on both sides of tortilla it will be a perfect glue, and other ingredients will be kept inside the tortilla.

If you use the additional ingredients listed below, make sure you have them ready before preparing quesadilla. I bake tortilla on a pancake maker, but you can use any flat pan for that as well. If you use a sticky pan, put some olive oil in it.

  • Store bought seasoning for tacos (or for quesadilla if you find)*
  • Chilli flakes
  • Chilli powder
  • Sweet paprika

You can also use seasoning mix for chicken or gyros, they have a nice spice blend that makes chicken spicy and delicious.

What can you put in a quesadilla with chicken?

In addition to these chicken quesadilla ingredients you can put some other ingredients too. Here are some ideas:

Vegetables: lettuce or any type of green salad, yellow or pink onion, chives, fresh or pickled cucumber, avocado, black beans

Sauces: Sala mexicana, taco sauce, ketchup, mayonnaise, combined ketchup, mayo and sour cream

More meat: add some beef or chorizo

More carbs: rice
